Abstract
The aim of this study will be first to create a personalized diet for livestock animals in order to improve the content of functional molecules and bioactive peptides in buffalo milk and then investigate the buffalo milk metabolomic profile for the identification of novel health-promoting biomolecules with beneficial effects on cardiovascular risk prevention in type 2 diabetes. The results can be directly applied to the production of functional foods with high health benefits, able to meet the demands and the needs of the modern food industry and circular economy, in terms of sustainability of agri-food and dairy production. In particular, this study might lead to the definition of new dietary interventions for cardiometabolic risk prevention in type 2 diabetes, based on a targeted diet that includes milk as a source of functional metabolites and biopeptides.
